Collin Nicholas
Collin is a Bay Area native and hospitality expert who focuses on embracing seasonal, locally sourced ingredients and showcasing them through thoughtful, well developed, balanced cocktails that accentuate the sensory experience. As a two time finalist of Bombay Sapphire's “Most Imaginative Bartender Award” and over eleven years of experience, he has opened and operated bars in numerous cities such as Rome, New York and San Francisco. Collins’ diverse range of experience has provided him with the understanding of crafting a cocktail and the ability to continuously elevate that craft.
Originally from Berkeley, he grew up immersed in the strong and vibrant culture of the East Bay and draws from the surroundings and diversity of the region from where he was raised. After attending The Institute of Culinary Education for Hospitality Management in New York City, Collin was responsible creating three separate beverage programs for well-established chefs and restaurant groups in Manhattan.
Absorbing the operations and systems of three high volume groups Collin moved back home inspired to create truly unique drinking programs influenced by his exposure traveling the world and true passion through delivering thoughtful service. Our group is focused on providing a true sense of hospitality and elevating a whole, well rounded sensory drinking experience which will ultimately challenge convention but also provide an inspired experience for his guests.
Most recently Collin relocated to Portland, Oregon and was named the Bar Director of Submarine Hospitality. While overseeing the creative direction and maintaining systems at both Tusk and Ava Genes, Collin developed the three bar outlets in the newly established Hoxton Hotel in downtown Portland.

Sage, an Oregon native, has an incredible way of bringing stories to life through this lens. with an outstanding eye, sage offers a calculated and creative perspective to which we can attribute the quality of our video and media content. Partnered with Shannon Harvey the duo are dynamic, organized and multifaceted.
Note from Sage: ‘Photography and Video are my life. When I am not shooting videos or editing them, I am thinking of different ways to shoot a subject. How to light them, what makes something cinematic. Traveling and gardening are my off time passions. I have lived in California, Oregon, Hawaii, and now Washington. Every place I have been to has taught me something about people and how we all fit together as one. I love creating art so please let me know what you think when you see it!”
Teddy Albertson [ CFO ]
Teddy is a Portland native specializing in finance and hospitality with an emphasis in restaurant finance, project development and business operations. His focus is on delivering exceptional service and hospitality with an emphasis on finance and business operation/relations. Teddys unique ability to strategize, position companies and develop systems is a key element of our success.
Graduating from the University of Oregon, he began his career in San Francisco in tax accounting and private equity. After a stint at AOC SF Restaurant Consultancy as well as managing finances for a number of major industry accounts he returned to Portland and took the role of CFO for Paley Hospitality and Submarine Hospitality where he contributed significantly to the growth for both companies. Sharing a philosophy of providing thoughtful hospitality and elevated, ingredient focused cocktails Teddy and Collin aim to develop a group that is both stimulating and unique.
Charlie Hanson
Charlie Hanson, Bay area born artist, is a multi-faceted designer and art director with a strong background in creating engaging work, curating spaces and cultivating experiences for clients on both large and small scales. He possess a keen eye for clean and simple aesthetic and a passion for creative collaboration. Charlie is a visual storyteller and problem solver with a firm belief that some of the best ideas come from some of the strangest places. One of Uncommon Project's designers, Charlie has contributed to numerous Uncommon campaigns and credited with creating the "Uncommon" Logo.
